Menu Plan Monday: Oct. 31

October flew by, which I knew it would. It always does. It seems to be one of our busiest months. There’s the annual pumpkin patch trip, two anniversaries, 3 birthdays (in the same week!), and Halloween. Trick or treat. Amelia has been talking about it for weeks! This day is right up her alley. She gets to walk around with a bunch of people, carry a little bag, and put little things into her little bag. Not to mention the fact that those “little things” are candy. She’s beyond excited!

Here’s our menu for the week!

Monday: Crisp-skinned Roast Chicken, baked potatoes, green beans

Tuesday: Loaded Baked Potato Soup, bread

Wednesday: Chicken Fajitas, Black beans & rice (Amelia got a girl’s cookbook for her birthday. This recipe comes from the book and I’m going to let her help.)

Thursday: Ground Beef Stroganoff over egg noodles, broccoli

Friday: Homemade pizza, veggies and dip

Saturday: Baked Chicken Penne (omitting the mushrooms and sundried tomatoes and using roasted red peppers instead), corn

Sunday: Honey Sauced Chicken, rice and broccoli

I may make some Snickerdoodle muffins  as well 🙂
